Red Dirt Goulash

I grew up eating and cooking goulash, so when I went veg, I had to find a way to make it sans animal products. I started out using Hamburger Helper Chili Macaroni and fake ground beef, but while these are veg, they're not exactly healthy. The Red Dirt Seasoning mix mentioned here is something I just recently came up with, and will be featured in some of my recipes in the future.

1/4 cup diced onion
1 1/2 Tbsp beef style seasoning
2 cups soy curls, broken or smashed into small pieces
1 1/2 Tbsp paprika
1/4 tsp cumin
1 tsp salt
2 tsp tamari sauce
1 Tbsp Red Dirt seasoning mix
1 can diced tomatoes
1 can black beans
1 can pinto beans, or other beans of your choice
1 1/2 cup whole grain pasta
3 1/2 cups water
1/2 - 1 cup vegan cheese or cheese sauce, optional

Saute onion in a small amount of water until soft and carmelized. Add remaining ingredients, bring to a boil, then cover and simmer until pasta is al dente (don't let the pasta get too done or it will fall apart on you). This can also be done in a slow cooker by adding all ingredients and cooking on low until pasta is done. Serve with crackers or cornbread.
